Pumpkin Chocolate Chip Cookies


One of our favorites!

1 Cup of Libby's Canned Pumpkin
3/4 Cup Sugar
1/4 Cup Vegetable Oil
1/4 Cup Applesauce
1 Egg
2 Cups Flour
2 tsp. Baking Powder
1 tsp. Cinnamon
2 tsp. Pumpkin Pie Spice
1/2 tsp. Salt
1 tsp. Baking Soda
1 tsp. Milk
1 Cup Mini Semi-Sweet Chocolate Chips
1 tsp. Vanilla

Dissolve baking soda in milk; set aside.
In large bowl add pumpkin, sugar, oil, and egg; stir. Add four, baking powder, cinnamon, pumpkin pie spice, salt, and baking soda mixture. Mix well. Stir in vanilla and chocolate chips.
Spoon onto greased cookie sheet. Bake at 375 for 9-11 minutes.
