Chicken Curry


This recipe is from my awesome brother, Scott. Thanks!

1 Jar Pataks Coconut Curry (find at Asian stores or Asian aisles at Supermarket)
1 Can 13.5 oz Coconut Milk
1.5 lbs diced Chicken
4 or 5 Red Potatoes
1 Sweet Potato (optional)
Handful of baby carrots
Peas (optional)

Mix Curry and Coconut milk in a wok, let simmer for 5 minutes, add chicken and cook for 15 minutes or so. Add potatos, carrots, peas and let simmer on low for 45 minutes. Serve over rice! Can be served with Naan bread (or Pitas if you can't find Naan.)
